well, I hope you are, because I have a cozy recipe designed purely to fuel your pumpkin-everything-loving desires!! 🙂 (squee!!)

this recipe is stupid-easy. like, really. it’s the simplest thing I’ve ever made.
it takes a whopping total of 5 ingredients (or even just 3, depending on your personal preferences!). it’s so completely customize-able, and you can honestly add whatever you wish to your oats! (remove the pumpkin, and you’ve got your base to which you can add pretty much anything!)

for ONE cup of overnight oats, you’ll need:
1/2 cup oats
1/2 cup milk (any kind!)
1/8 – 1/4 cup pumpkin (depending on how strong you want it)
1 tbsp honey (or to taste, whatever you like!)
1 tbsp chia seeds (if you want them)

DO THIS:
1.) add your oats & chia seeds to your jar
2.) add milk
3.) add pumpkin & stir
4.) if you wish, add the honey, to tasteprep4

.) place in the fridge. leave it there for at least 3 hours. (or you can eat it the next few mornings or so… like I do!) 🙂
6.) eat it up cold, or pop it into the microwave for 30-60 seconds. you can always add goodies on top to spruce up your overnight oats, too. granola, dried fruit, or cacao nibs are pretty tasty!

and seriously stupid-easy, am I right, or am I right?!

their convenient mason jar container and the fact that they’re so darn easy-to-eat make overnight oats a perfect breakfast for on-the-go mornings (or for those of us who can barely remember our name in the morning, let alone how to fix a healthy breakfast to start the day)!
plus, they’ve got TONS of protein (thanks, chia seeds!) to make sure you stay full till lunch time, and bunches of fiber in those healthy grains. and who am I kidding… who doesn’t want yet another excuse to eat something pumpkin?! enjoy it while you can 😉
