I know that by this time, you all are familiar with simone, from her blog the adventures of everygirl. she and I are great friends, and because of that I like to make you all aware of her blogging brilliance!

well, a few weeks ago I was supposed to post this particularly wonderful post of hers, and, well… life happened. I kept forgetting to post it!

but no longer!

ladies and gents… simone’s lunching breakthrough:

well, hello, you lovely person! I’m Simone from The Adventures of EveryGirl and I’m beyond thrilled to be guest blogging today on Untidy Grace! I come to you with a very important question.

can we please talk about lunch?

if you aren’t home for the mdday respite, you have two options, either pack a lunch or grab something out. the problem is that restaurant lunches can add up in both dollars and calories and brown-bagging it is straight up boring.

no more! for your lunching pleasure, 5 lunches for grown ups (that don’t suck)

couscous salad

halved grapes, toasted walnuts, and parsley season up this delicious and easy base. add a hard-boiled egg for more protein, or throw in some diced chicken. the neutral couscous lends itself to almost any combination of flavors!

pita pizza

channel your inner kid with this grown up version of a pizza lunch. layer leftover tomato sauce and mozzarella cheese on a pita and bake at 350 for 8-10 minutes until the cheese is melty and bubbly. knock out the prep while making dinner the night before and morning is a breeze. a green salad with the best balsamic vinaigrette ever makes a lovely nest for the cheesy goodness.

this is another great way to use leftovers and turn lunch-making into a stress free experience. in addiction to a standard chicken, mayo, and seasoning base, grapes, cheese, and broccoli florets accent the curry powder that gives this salad its smokey earthiness. I pair it with crackers and fruit, but you could just as easily make a sandwich or stuff the concoction in a pita.

a simple salad of lettuce, tomato, and avacado, dressed with a combo of salsa and sour cream makes a lovely bed for taco meat (another leftover gem!). a simple quesadilla of cheese and tortilla make a yummy side. the possibilities for toppings are endless. olives, hot peppers, or beans would add complexity to this simple, but satisfying, dish.

alright, sandwich, but it’s a really good one! an everything bagel and spicy mayonnaise (just add some cayenne pepper to the creamy stuff) adds extra flavor to an already fantastic concept. if you’d rather avoid the mayo, achieve the same concept with some slices of avocado sprinkled with the cayenne. tomato can make everything soggy while waiting for lunchtime, so you may want to wrap the slices with a small piece of paper towel.

it’s time to take back lunch time and eat something good for your body, soul, and wallet!
