nibbles + scribbles // how to bake one cupcake in 5 minutes (or less!!)

okay peeps.

let’s be honest.
sometimes a girl just needs a cupcake.

cake, er, case in point:
(hahahahaha punny me!)
when you drive an hour into DC to cuddle with some kittens whilst drinking coffee at crumbs + whiskers, and you get there and realize that on fridays and weekends you need a reservation in order to cuddle with said kittens and sip said coffee.
(this is your fair warning, kitten-and-coffee-loving-friend)
and then you can’t find your car. **SOB**
those types of days call for cupcakes.

but, of course, after these types of days, I am way too lazy to actually, like, bake cupcakes, you know?
I mean, come on.
I just want the yumminess without the work.

yes, you say?
well, too bad!

problem solved!!

one delicious cupcake.
five minutes or less.
sorry about the crappy phone photo. I started eating that deliciousness before remembering I should take a picture. I was obviously too lazy to go downstairs and find my camera. haaaa.

here is what you need:
1 adorable mug (whee!!)
1 egg
3 TBSP of melted butter
2 TBSP milk
1 TSP vanilla
1/4 cup sugar (yummy yummy yummy)
7 TBSP self-rising flour

here is what you should do:
1. whisk the egg and butter
2. mix in the milk, vanilla, and sugar
3. add the flour and mix it in
4. microwave for 1 minute (or more, if your microwave isn’t quite as powerful…mine took 2 minutes!)
5. top with icing, because duh and delish.


no sharing allowed 😉

so tasty.
so beautiful.
so easy.
so worth the five (or less minutes).

amiright? 😀

feel 100% free to whip up some tasty frosting and cover that bad boy in ooey-gooey yumminess! 🙂
FYI: I used all coconut milk in both the cupcake itself and the frosting, so it’s all dairy free minus the egg!!
