my dear rachel visits this week!!

I’m seriously way excited!
I gave you all an idea of what we’d be doing and eating in an older post, but now that the Monday has hit, it’s time to make those meal plans official. 🙂 and I couldn’t be more excited for all of the yummy-ness that is in store!! as always, linking up with Organizing Junkie.

**I know this breaks my three meat dinners a week rule, but I have leftover plain cooked chicken from last night’s chicken and rice, so I’ll use that for tonight’s paprika lime chicken**

monday// paprika lime chicken & rice burrito bowls
tuesday// rosemary steak & potatoes kabobs (yum!) with a veggie
wednesday// homemade spaghetti-o’s
thursday// walker family meatballs & white rice
friday// barbecue chicken quesadillas & mexican corn on the cob
saturday// potato corn chowder

I’m drooling.
this is gonna be a good week for food 😉

meanwhile, allow me to share this stupid-easy, crazy-fast recipe for homemade spaghetti-o’s.
we make this on Wednesdays when we have less than an hour from when I get home from work until it’s time to head out again for praise team practice and youth group at our church.
and husband loves it.
plus, it makes enough for us to have some for lunch the next day. (so I guess it serves about 4)
it’s also yummy served with mozarella sticks- but often the soup itself fills us right up!

1 large can tomato soup
half box ditalini pasta
1/2 cup water
splash of half and half, to taste

cook pasta according to directions on box (usually about 10-12 minutes)
while pasta is cooking, pour can of soup into a pot
add water and half & half to tomato soup and heat
when pasta is done cooking, drain and add to heated soup
serve 🙂

also, hopefully sometime in October, I’ll be going gluten free for three weeks!
because of certain, persistent health issues, I may have a gluten allergy. a good way to see if that’s the case, is to go gluten free for three weeks, then try introducing gluten into your system again to see how your body responds. it’s going to be a crazy journey, and I’m so ready to finally begin it. can’t wait to share some gluten free recipes with you all next month. 🙂
