home-made cinnamon rolls, or, menu plan monday cop-out

In the future, I hope to make Mondays the day of menu-planning. (woohoo!) Sometimes I actually dream I’ll have a super cute, giant, all-encompassing organizier pad hanging on my fridge. (don’t tell.)
Unfortunately, being in pre-wife limbo for 18 more days, I don’t have a reason to plan a menu. Although, who am I kidding, I have our first two weeks planned already. But I’ve got to have something to post those weeks! 😉
So today you’ll have to settle for a scrumptious little recipe even the sourest of people couldn’t turn down: home-made cinnamon rolls! These bad boys are made from my favorite biscuit dough recipe, so they’re super duper flaky and buttery; plus, they’ve got three kinds of sugar and a generous sprinkling of spicy cinnamon. Uh, YUM. (please wipe your drool from the keyboard and read on. I won’t tell.)

Home-made cinnamon rolls

(from Pillsbury’s Old Fashioned Baking Powder Biscuits- so easy)
2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1/2 cup shortening or margarine (I always use margarine)
2/3-1 cup milk
white sugar
icing sugar
brown sugar

1.) heat oven to 450 degrees
2.) combine flour, baking powder, and salt
3.) cut in shortening or margarine with a fork or pastry blender
4.) add milk, just until it’s a bit soft- you don’t want it too sticky
5.) spread dough into a rectangle shape on a floured surface
6.) sprinkle a THICK layer of cinnamon! don’t skimp on the edges
7.) do the same with the white sugar
8.) sprinkle a thinner layer of icing sugar
9.) one more layer of cinnamon
10.) roll the dough up into a long tube and cute into pieces about 2 inches thick
11.) spray pan and place cut pieces onto it. sprinkle lightly with brown sugar.
12.) bake for 8-12 minutes, or until golden brown

The brown sugar should kind of get crunchy and almost candy-like on top (sooo good…)
 mixed up a little frosting for mine, even though it’s definitely sweet enough on its own (and you should try them plain first!). I simply put a cup of icing sugar into a bowl with a splash of cream and a splash of vanilla flavor.
